Peanut Butter Noodles

Ingredients

  • 2 Noodle nests
  • 4 tbsp Peanut butter
  • 100ml Coconut milk
  • 200ml Stock
  • 2 Carrots into ribbons using a peeler
  • 4 Spring onions

Method

  • In a pan, fry the spring onions for 1 minute.
  • Add the stock and coconut milk then stir in the peanut butter -simmer for 2-3 minutes.
  • In the meantime, place the noodles in a heat proof container, add boiling water to cover the noodles and add a lid/ clingfilm -leave to stand for about 5 minutes.
  • Drain the noodles and then add to the pan with the sauce. Add the carrot ribbons and stir well. Cook through for another 2 minutes and then serve.
