Peanut Butter Noodles
Ingredients
- 2 Noodle nests
- 4 tbsp Peanut butter
- 100ml Coconut milk
- 200ml Stock
- 2 Carrots into ribbons using a peeler
- 4 Spring onions
Method
- In a pan, fry the spring onions for 1 minute.
- Add the stock and coconut milk then stir in the peanut butter -simmer for 2-3 minutes.
- In the meantime, place the noodles in a heat proof container, add boiling water to cover the noodles and add a lid/ clingfilm -leave to stand for about 5 minutes.
- Drain the noodles and then add to the pan with the sauce. Add the carrot ribbons and stir well. Cook through for another 2 minutes and then serve.
