Quick Banana Pancakes

A hearty healthy breakfast that kids love. Why not shake up your mornings on a weekend and go on a fruit adventure.
Ingredients:
- 1 medium banana
- 2 large eggs
- 1/2 tsp ground cinnamon
- healthy oil or spray oil
- fresh fruit to serve
- plain or greek yoghurt
Method:
- Mash the banana with a fork in a bowl.
- Add the eggs and mix until a smooth batter is formed. Can be blended if you prefer.
- Heat a frying pan with a little oil.
- Scoop 1tbsp of batter in the pan to form small pancakes.
- Fry for 1-2 minutes until it looks dry, then turn with a spatula and fry for another 30 seconds.
- Sprinkle with cinnamon to serve or serve with fruit and yoghurt, or all 3.
