Pancake Day

A stack of banana pancakes, topped with sliced banana. February 13th marks pancake day! Get the kids involved and try out our recipe for Quick Banana Pancakes.

Serves 2

A hearty healthy breakfast that kids love. Why not shake up your mornings on a weekend and go on a fruit adventure.

Ingredients:

  • 1 medium banana
  • 2 large eggs
  • 1/2 tsp ground cinnamon
  • healthy oil or spray oil
  • fresh fruit to serve
  • plain or greek yoghurt

 

Method:

  1. Mash the banana with a fork in a bowl.
  2. Add the eggs and mix until a smooth batter is formed. Can be blended if you prefer.
  3. Heat a frying pan with a little oil.
  4. Scoop 1tbsp of batter in the pan to form small pancakes.
  5. Fry for 1-2 minutes until it looks dry, then turn with a spatula and fry for another 30 seconds.
  6. Sprinkle with cinnamon to serve or serve with fruit and yoghurt, or all 3.
